Gluten Free, No Refined Sugar Pumpkin Muffins

Gluten Free No Refined Sugar Pumpkin Muffins
(vegan version included)

1 can pumpkin puree
¼ melted butter or vegan butter
½ cup maple syrup
¼ cup coconut sugar or date syrup
1 egg or 1 flax egg for vegan version (1 tbls ground flax + 3 tbls water let set for 15 minutes)
1 teaspoon vanilla extract
1 Tablespoons molasses
1 cup oat flour
1 ½ cup almond flour
1 teaspoon baking soda
2 Tablespoon pumpkin spice
¼ tsp salt
2 medium bowls
Muffin Tin

Whisk together wet ingredients
Add in dry ingredients mix until fully incorporated
Bake at 375 for 20-25 minutes in greased muffin tin
Cool for at least 1 hour
