Pumpkin Spice Blend
2 Tablespoons cinnamon
2 Teaspoons ground ginger
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/4 allspice (optional)
1/4 cardamom (optional)
Mix all together and store in airtight container

Ingredients:
4 cups extra thick oats
1 cup pumpkin seeds
1 cup cashews
2 Tablespoons pumpkin spice mix
1/4 melted vegan butter or coconut oil
2/3 cup maple syrup
1/4 cup molasses or date syrup
1 teaspoon salt

Supplies:
Large mixing bowl
Sheet pan

Directions:
Preheat oven to 400 degrees
In a large bowl mix together all ingredients
Spread granola out on a parchment lined sheet pan and bake for 30 minutes. Remove from oven and careful turn and mix the granola. Return to oven and bake for another 30 minutes. Let cool on the counter for at least 20 minutes then enjoy. Store in airtight container and enjoy for the next couple of months.
